The Dolcetto grape is very high in anthocyanins which produces a deep purple wine that is high in tannins but low in acididity. Wines are usually soft and fruity and should be drunk early. Can have notes of licorice and almonds.Origin:
Dolcetto is an Italian variety found in the northwest region of Piedmont. Dolcetto ripens extremely early and is vulnerable to fungal diseases.
Tips:
Shorter fermentations will help to soften the tannins while not compromising color.
