Vin Santo is made from the white Trebbiano and Malvasia grapes. The grapes are dried under the rafters of homes. Vin Santo comes in a wide range of sweetness, from very sweet to very dry, and a wide range of quality. The dry version resembles dry sherry. DOC rules in Italy require at least 3 years of aging and many producers age for at least 5 years. Origin:
