WYEAST RELEASES WINTER PRIVATE COLLECTION & NEW YEAST STRAINS

Hood River, Oregon, January 1, 2010 – Wyeast Laboratories, Inc. wishes to announce the immediate release of the Winter Private Collection and the addition of three yeast strains that will be a part of the Wyeast Culture Collection™. Wyeast established its original Culture collection in 1986 which now includes over 50 brewing strains for commercial and home brewers.

“We are excited to provide both the commercial and home brewer’s additional varieties of yeast strains to give them the opportunity to brew and create more styles of beer. We will continue to bring you new seasonal strains each quarter that I think you will find rewarding” said, Jeannette Kreft-Logsdon, owner of Wyeast Laboratories, Inc.

The Winter Private Collection released January through March of 2010 includes a new Thames Valley II yeast, the Belgian Schelde yeast and the “Pacman” yeast. The Private Collection is available to home brewers in the Activator™ package.

1882-PC Thames Valley II is a highly flocculent strain that results in bright beers not requiring filtration. We have brought back the 3655-PC Belgian Schelde Ale strain as a result of numerous requests that were received from the brewing community. This yeast is great for brewing a Belgian black beer or a dark Abby style ale. It is estery with very low levels of phonolic aromas. And, we have also received permission from Brett Joyce, President of Rogue Brewing, to release the Pacman strain. This yeast is perfect for brewing big, rich stouts and porters. It is a clean aggressive strain that works well at lower temperatures. 1764-PC Rogue Pacman yeast is only available to home brewers!

Beginning January 18th, 2010, the following three yeast strains will be added to Wyeast Culture Collection™, which is available year round. The three strains include the infamous Denny’s Favorite 50, French Saison, and the exclusive Wyeast Roeselare Ale Blend. “These strains were so popular as our Private Collection it was only natural to release them year round” added Jeannette Kreft-Logsdon, President of Wyeast.

1450 - Denny’s Favorite 50. This terrific all-round yeast can be used for almost any beer style, and is a mainstay of one of our local home brewers, Mr. Denny Conn. It is unique in that it produces a big mouth feel and accentuates the malt, caramel, or fruit character of a beer without being sweet or under-attenuated.  3711 French Saison – This yeast produces saison or farmhouse style biers that are highly aromatic, peppery, spicy and citrusy. This strain enhances the use of spices and aroma hops, and is extremely attenuative but leaves an unexpected silky and rich mouth feel. 3763 Roeselare Ale Blend - This blend of lambic cultures produce beer with a complex, earthy profile and a distinctive pie cherry sourness. Aging up to 18 months is required for a full flavor profile and acidity to develop. This blend will produce a very dry beer due to the super-attenuative nature of the mixed cultures.
