Yeast Style Guide

STYLE: Niagara

Back to Styles List

Niagara is very cold tolerant, vigorous, and productive. Wines made from Niagara grapes have a very ditinct aroma and flavor profile. The wines are often described as foxy or musky but can often have a complex and somewhat perfumed aroma.

Origin:
Niagara is a vitis labrusca variety that is a cross between Concord and Cassady. This variety was created in Niagara, New York in 1872.

Tips:
Cask aging can reduce the foxy character in Niagara wines.

Wyeast Strains:
   4242 - Fruity White (formerly Chablis™)
   4783 - Sweet White (formerly Rudesheimer™)
