Overall Impression:

Rum is the result of centuries-old methods of distilling the fermented juice of cane sugar, molasses, or one of its many by-products. Fermentation rate will influence the complexity and body of the rum, which will vary by climate, style, and tradition. The use of barrels to mature the spirit can add additional sophistication, rich hues, as well as allowing the rum to mellow as it matures. Flavors range from light sweetness to robust molasses and caramel. Some rums are spiced with cinnanon, rosemary, absinthe/aniseed, or pepper while flavored rums can be infused with flavors of banana, mango, orange, citrus, coconut and more.
